Metabolomics: An analytical technique for food processing evaluation

Michele Utpott et al.

Summary: This review discusses the recent research on metabolomics analysis in food processing, highlighting its ability to evaluate chemical and organoleptic transformations. It focuses on process-composition-function relationships and covers various transformations in foods subjected to different processes. Metabolomics is seen as a valuable tool for academia and industry in understanding the conversion of raw materials into ready-to-eat products.

The Application of FTIR Spectroscopy and Chemometrics for the Authentication Analysis of Horse Milk

Mitsalina Fildzah Arifah et al.

Summary: This study investigates the authentication of expensive horse's milk using Fourier-transform infrared (FTIR) spectroscopy combined with chemometrics. The results demonstrate that linear discriminant analysis (LDA) can effectively discriminate between pure horse's milk and adulterated samples. Additionally, partial least square regression (PLSR) and principal component regression (PCR) models provide accurate predictions of horse's milk adulteration with goat's milk and cow's milk.

Incidence of fraud and adulterations in ASEAN food/feed exports: A 20-year analysis of RASFF's notifications

Iyiola Oluwakemi Owolabi et al.

Summary: This study investigated the occurrence of food fraud and adulterations in exports from ASEAN countries, finding that seven out of the ten member countries had cases reported over a 20-year period. Thailand and the Philippines received the highest frequency of notifications, with the highest number of notifications coming from the United Kingdom. Border rejections and subsequent destruction of products were common, especially for exports from Indonesia.
