First review on the selenium status in Germany covering the last 50 years and on the selenium content of selected food items

Summary: This article presents the research on selenium status and intake in the German population. By screening literature from the past 50 years and combining the results of various studies, the average selenium level in the German population was determined, and the selenium content of selected food items was analyzed. These findings will serve as a foundation for interpreting future results from national food consumption surveys and estimating selenium intake in the German population.

Exogenous Selenium Treatment Promotes Glucosinolate and Glucoraphanin Accumulation in Broccoli by Activating Their Biosynthesis and Transport Pathways

Summary: Supplementation using selenium is an effective approach to promote the accumulation of glucosinolates with anti-carcinogenic properties in plants. However, the molecular mechanism of selenium in regulating glucosinolates synthesis remains unclear. This study showed that selenium treatment significantly increased the levels of total sulfur and total selenium contents, as well as Trp-derived glucosinolates levels in broccoli roots. The concentration of 4MSOB and sulforaphane content in fresh leaves also increased after selenium treatment. Moreover, the transcript levels of genes involved in sulfur absorption, glucosinolates biosynthesis, and transporters were induced upon selenium exposure.

Antioxidant activity stability and digestibility of protein from Se-enriched germinated brown rice

Summary: The protein obtained from selenium-enriched germinated brown rice (Se-GBR) showed higher antioxidant activity compared to germinated brown rice (GBR), but this activity was reduced significantly by the addition of citric acid, metal ions, and salt ions. Different cooking methods did not affect protein content significantly, but high pressure and microwave cooking led to decreased protein digestibility. Food processing methods should be carefully considered to maintain the nutritional properties of Se-GBR and GBR proteins effectively.
