Asparagine and dough quality: Gluten strength factors in hard red spring wheat

Variation in quality traits of newly developed Serbian wheat cultivars under different environmental conditions of Pannonian plain

Summary: This study aimed to investigate the effects of different growing seasons on the technological properties of new Serbian wheat cultivars and explore the relationships among quality traits. The results showed that modern Serbian cultivars had higher grain yield but lower technological quality compared to the widespread cultivars. Furthermore, the growing seasons had the most significant impact on bread volume and extensograph parameters. Additionally, strong positive correlations were found between protein content, sedimentation value, wet gluten content, water absorption, and extensograph extensibility.

Effects of water deficit and high N fertilization on wheat storage protein synthesis, gluten secondary structure, and breadmaking quality

Summary: This study investigated the effects of water deficit and high N-fertilizer application on wheat storage protein synthesis, gluten secondary structure, and breadmaking quality. The results showed that these treatments promoted the accumulation of storage proteins and gluten macropolymer, improved protein secondary structure formation and lipid accumulation, and reduced flour moisture. These changes led to improved dough rheological properties and breadmaking quality.

Effects of growing environment, genotype, and commercial fertilization levels on free asparagine concentration in Western Canadian wheat

Summary: This study found that the concentration of free asparagine in wheat is mainly influenced by the growing environment, genotype, and their interaction. The most effective strategies to control free asparagine levels in Canadian wheat are growing wheat genotypes in suitable environments and selecting genotypes with lower potential for free asparagine formation. Limited knowledge on free asparagine concentration and reduction strategies in Canadian wheat could impact Canadian wheat access to global markets, particularly the European market.

Summary: Various methods have been used to introduce the Glu-D1 locus into durum wheat, including whole chromosome additions, substitutions, homoeologous recombination, and genetic transformation. Each method has its drawbacks, with homoeologous recombination showing the most promise for improving durum wheat quality.
