Impacts of infrared heating and tempering on the chemical composition, morphological, functional properties of navy bean and chickpea flours

Burcu Guldiken et al.

Summary: The study found that the impact of infrared heating on pulse seeds is influenced by various factors such as surface temperature, moisture content, and seed composition. Infrared heating can improve the protein quality and starch digestibility of flours, but may have adverse effects on solubility, oil emulsification, and foaming ability of the flours. Additionally, high surface temperature has a significant impact on the starch structure in pulse flours.

Effect of variety and environment on the physicochemical, functional, and nutritional properties of navy bean flours

Burcu Guldiken et al.

Summary: The study evaluated the physicochemical, functional, and nutritional properties of flours from six navy bean varieties cultivated in two different locations in Manitoba, Canada. The results showed that environmental factors significantly affected protein content, total starch content, and zeta potential of navy bean flours, while the genotype had insignificant effects on these properties. Moreover, genotype, environment, and their interactions had significant effects on water holding capacity and viscosity of the flours.

Effect of roasting pulse seeds at different tempering moisture on the flour functional properties and nutritional quality

Andrea K. Stone et al.

Summary: This study investigated the effects of wet roasting on the functional properties and nutritional quality of different pulse seeds. It found that wet roasting generally improved the oil holding capacity and protein digestibility of the pulses, but could decrease foaming properties. Wet roasting also increased the rapidly digestible starch content and could be beneficial for utilizing pulses in food products based on their functional properties and protein quality.
