Gum arabic/maltodextrin microencapsulation confers peroxidation stability and antimicrobial ability to pepper seed oil

Summary: In this study, pepper seed oil was successfully microencapsulated by spray drying under optimal conditions, showing improved antimicrobial activity and enhanced antioxidant properties. The use of gum Arabic/maltodextrin as encapsulating agents significantly contributed to the preservation of PSO and its inhibitory effects against various bacteria species.

Physicochemical and physiological changes during the ripening of Banana (Musaceae) fruit grown in Colombia

Summary: The study evaluated the physicochemical and physiological attributes of three contrasting commercial varieties of bananas during post-harvest ripening. Significant differences were found in quality attributes among varieties, and starch levels decreased significantly during ripening, with different hydrolysis rates observed among the varieties. These results suggest potential parameters that may help improve current methods for monitoring ripening of bananas, particularly important for commercial varieties.

Effect of alginate coating incorporated with Spirulina,Aloe veraand guar gum on physicochemical, respiration rate and color changes of mango fruits during cold storage

Summary: The objective of this study was to evaluate the effects of Spirulina platensis (SP), Aloe vera (AV), and guar gum (GG) incorporated into an alginate (AL) coating on the quality properties of mango fruits stored at 12 ± 1°C for 4 weeks. The results showed that SP and AV had the most positive effect on preserving the bioactive compounds of mango fruit, while GG reduced changes in peel color significantly. Incorporating AV in the alginate coating helped maintain mango firmness, and enhanced total phenol, flavonoid, and antioxidant activity.

Gum Arabic Edible Coating Reduces Postharvest Decay and Alleviates Nutritional Quality Deterioration of Ponkan Fruit During Cold Storage

Summary: The study found that using 12% and 15% gum arabic coatings can effectively reduce decay and weight loss in Ponkan fruit, preserve higher levels of total soluble solids, and delay the increase in ripening index. In particular, the 12% gum arabic coating treatment exhibited lower respiration rate and loss of important nutrients like ascorbic acid.
