Dietary fat intake and quality in long-term care residents in two cohorts assessed 10 years apart

Summary: The study aimed to compare and describe the detailed dietary fat intake, fat quality, and associated factors among residents in long-term care facilities at two different time points, and to reflect the correspondence between fat composition and fat quality with current nutrition recommendations. The results showed a deterioration in the fat quality of long-term care residents, despite official recommendations, between the two measurement points.

Insulin resistance during sleep helps maintain normal blood glucose levels by switching to fatty acid oxidation in muscles and modulating glucose production from the liver and kidneys. Postprandial glucose fluctuations are optimally regulated by a combination of various mechanisms, including the liver's critical role in disposing ingested glucose and preventing acute increases in blood glucose levels after meals.

Summary: This study found that consuming blackcurrant puree and a product with fermented quinoa could lower postprandial blood glucose and insulin levels, resulting in a more stable blood glucose decline curve and improved glycemic profile. Compared to the control group that only consumed water, blackcurrant and the product with fermented quinoa significantly reduced glucose and insulin levels in the first 30 minutes after eating.
