Drying kinetics and sensory characteristics of dehydrated pumpkin seeds (Cucurbita moschata) obtained by refractance window drying

Drying kinetics, mass transfer parameters, and specific energy consumption analysis of watermelon seeds dried using the convective dryer

Summary: Convective tray drying experiments were conducted to investigate the drying kinetics, mass transfer parameters, and specific energy consumption of watermelon seeds at different temperatures (40, 50, and 60 degrees C) and a fixed air velocity of 1.5 ms(-1). The drying characteristics of watermelon seeds were significantly affected by the drying temperature, and the best model for thin-layer drying kinetics was found to be the Midilli-kucuk model. The diffusion of moisture was observed to be controlled by internal and external resistance, and it was recommended to dry watermelon seeds at a higher temperature of 60 degrees C to achieve low energy consumption and high mass transfer coefficient.

Refractance window drying: A cohort review on quality characteristics

Summary: RWTM drying has the potential to minimize changes in the quality properties of food by using circulating hot water to bring thermal energy to the material to be dried. It restricts the temperature of the drying material surface to 70-85°C, allowing for high retention of material quality and heat sensitive nutritional compounds in the final dried product. Compared to other drying processes, RWTM drying offers advantages in terms of retaining heat labile compounds, quality parameters, and energy efficiency with reduced operating costs.
