Rapid detection of apple juice concentrate adulteration with date concentrate, fructose and glucose syrup using HPLC-RID incorporated with chemometric tools

Summary: The study focuses on substituting apple juice concentrate with cheaper sweeteners and utilizes HPLC-RID analysis to detect adulteration. The results show that the glucose/fructose ratio and maltose content are the best indicators for detecting the adulteration of apple juice concentrate. A specific set of carbohydrates is used as discriminating factors to detect adulteration at a limit of 10%.

Detection of lime juice adulteration by simultaneous determination of main organic acids using liquid chromatography-tandem mass spectrometry

Summary: A novel LC-MS/MS method was developed and validated for simultaneous determination of citric acid, iso-citric acid, and malic acid. The use of isotopically labeled citric acid as the internal standard allowed accurate quantitation of organic acids. Results showed that LC-MS/MS could be used as a confirmatory method for authenticity assessment of lime juice by regulatory bodies.

Summary: This study proposes the use of NMR spectroscopy combined with chemometric analysis as an alternative approach to investigate the metabolic profile of Calabrian citrus juices and evaluate changes during the thermal concentration process. The results show that PCA analysis can discriminate among samples from different industrial processes based on the nature of initial fruit batches, and indicate a decrease in the concentration of volatile compounds during the thermal process.

Varietal and Geographical Origin Characterization of Peaches and Nectarines by Combining Analytical Techniques and Statistical Approach

Summary: This study aimed to develop a chemical analysis methodology to deepen the knowledge related to the profile of metabolites in selected cultivars of peaches and nectarines cultivated in the Mediterranean area. A comparative study was conducted on yellow-fleshed peaches and nectarines from two geographical areas, analyzing chemical parameters of flesh and skin to identify any distinctive varietal and/or geographical characteristics. Various analytical-instrumental techniques were used, resulting in a model for the characterization of plant matrices that can be easily exported and extended to other types of vegetable matrices.
