Effect of Pre-Emulsion of Pea-Grass Carp Co-Precipitation Dual Protein on the Gel Quality of Fish Sausage

Quality changes in fish sausages supplemented with pangas protein isolates as affected by frozen storage and casing material

Summary: The study investigated the effects of pangas protein isolates and casing material on frozen storage characteristics of pangas mince sausages. The results showed that as storage time increased, expressible fluid content increased, while water holding capacity and cooking yield values decreased. Changes in protein structure and gelling ability were also observed. Sausages packed in LDPE casings had higher oxidation and bacterial counts compared to those in cellulose casings, but sensory scores remained relatively consistent regardless of casing material and protein isolates.

Ability of (extruded) pea protein products to partially replace pork meat in emulsified cooked sausages

Summary: This study investigated the impact of replacing 20% pork meat in cooked sausages with pea protein isolate (PPI), pea low moisture extrudates (LME), and pea high moisture extrudate (HME) on the nutritional, techno-functional and sensorial properties. The results showed that the inclusion of pea products did not affect the amino acid profile, but significantly reduced anti-nutritional factors and allergenic contents. However, it led to weaker networks, softer texture, and noticeable color changes.

Effects of chickpea and peanut protein isolates on the gelling properties of hairtail (Trichiurus haumela) myosin

Summary: This study investigates the effects of chickpea protein isolate (CPI) and peanut protein isolate (PPI) on the gel quality of hairtail surimi. The results showed that CPI significantly enhanced the gel strength, texture, storage modulus, water-holding capacity, and reticular flexibility, while PPI concentration of 2% yielded optimal results. CPI and PPI increased hydrophobic interactions between protein molecules and promoted gel network formation.

Low-Content Pre-Emulsified Safflower Seed Oil Enhances the Quality and Flavor of the Nemipterus Virgatus Surimi Gel

Advancement of food-derived mixed protein systems: Interactions, aggregations, and functional properties

However, the introduction of another protein in the mixed system poses challenges in terms of complex interaction, aggregation, gelation, and emulsification mechanisms for the molecular coalition. Efforts are being made to gain basic information on the dynamics, theories, and physicochemical characteristics of mixed systems in order to better modulate the structural and functional properties of binary systems.
