Organic Acid-Catalyzed Subcritical Water Hydrolysis of Immature Citrus unshiu Pomace

Summary: This study demonstrates the potential of using citric acid-catalyzed subcritical water hydrolysis to produce flavonoid monoglucosides and aglycons with enhanced enzyme inhibitory activities. The optimal conditions were found to be a citric acid concentration of 18.48% and a hydrolysis duration of 8 hours, resulting in inhibitory rates of 88.2% for pancreatic lipase and 62.7% for alpha-glucosidase.
