Summary: This study demonstrated the modulation of protein aggregation by influencing disulfide/sulfhydryl exchange reactions through the addition of various concentrations of reduced-glutathione (GSH) to modulate the properties of myofibrillar protein (MP) gels. The effects of GSH were found to be dependent on the concentrations and heating temperatures, with lower concentrations promoting aggregation and higher concentrations inhibiting it. SEM, AFM, and DLS results supported these findings, showing improvements in gel microstructure and inhibition of protein aggregation with the addition of GSH.
