Optimization of cupcake formulation by replacement of wheat flour with different levels of eggplant fiber using response surface methodology

Summary: Response surface methodology was used to design two optimal formulas A and B, each including eggplant-fiber replacing wheat flour at 12% and 8%, whole-egg at 71% and 57%, and sugar at 70%. The eggplant-fiber in the optimal formulas led to lower calories, higher moisture, ash content, antioxidant activity, and fiber compared to the control. Additionally, the color and texture of the optimal formulas showed significant differences from the control, with formula B being more similar to the control in terms of texture.
