Pilot Study for the Dietary Assessment of Xenobiotics Derived from Food Processing in an Adult Spanish Sample

Summary: This study aimed to describe the intake of xenobiotics such as heterocyclic amines (HAs), polycyclic aromatic hydrocarbons (PAHs), nitrates, nitrites, nitrosamines, and acrylamide, and identify dietary and lifestyle factors associated with their intake. The results showed that dietary HAs were mainly derived from meat, while PAHs were explained by oils and fats, alcoholic beverages, and milk. Different cooking methods, such as microwaving, frying, grilling, broiling, barbecuing, and braising, were responsible for the consumption of HAs and PAHs. Therefore, efforts should be made to adjust the intake of these compounds to the recommended levels by health agencies.
