Structural and Biochemical Characterization of a Polysaccharide Isolated From Vaccinium uliginosum L

Summary: A novel polysaccharide (VUP-1) isolated from Vaccinium uliginosum L. fruits exhibits high antioxidant activities and moderate alpha-amylase inhibitory activity. VUP-1 shows strong scavenging rates on DPPH• and OH•, as well as good reducing power. It also demonstrates significant inhibitory activities on the formation of dicarbonyl compounds and improved glycation end products.

Physicochemical and Biological Properties of Polysaccharides from Dictyophora indusiata Prepared by Different Extraction Techniques
