Improvement of antioxidant properties of jujube puree by biotransformation of polyphenols via Streptococcus thermophilus fermentation

Jing Li et al.

Summary: This study investigated the effect of Streptococcus thermophilus fermentation on jujube bioactivity. The results showed that the fermentation increased the total phenolics content, DPPH scavenging activity, and reducing power, while decreasing the ABTS scavenging activity. Twelve differentially metabolized polyphenols were identified in the fermented jujube puree. The upregulated phenolics exhibited positive correlation with DPPH radical-scavenging ability and reducing power.

Chemical and sensory evaluation of cold brew coffees using different roasting profiles and brewing methods

Nancy Cordoba et al.

Summary: This study evaluated the effects of different roasting profiles and brewing methods on the physicochemical and sensory characteristics of coffee brews. The results showed that coffee beverages were differentiated based on the roasting profile and water temperature used in brewing. Notably, hot brewing coffees had higher acidity and furan compounds compared to cold brewing, while non-volatile extraction rate increased at higher brewing temperatures.

Coffee cell walls-composition, influence on cup quality and opportunities for coffee improvements

Zheng Li et al.

Summary: Cell wall storage polysaccharides (CWSPs) in coffee beans significantly influence the organoleptic properties and health benefits of coffee beverages. By-products of coffee production also contain high concentrations of cell wall components, which can be utilized for various downstream products. In addition to their impact on coffee quality, CWSPs in coffee also play a role in plant stress responses and potential biotechnological strategies for coffee improvement.
