Complexation of soybean protein isolate with beta-glucan and myricetin: Different affinity on 7S and 11S globulin by QCM-D and molecular simulation analysis

Summary: This study focused on the complexation of soybean protein isolate (SPI) with beta-glucan (DG) and myricetin (MC), showing that the interaction altered the structures of SPI and resulted in different molecular weight distribution. Glycinin (11S) was found to have better affinity toward DG and MC compared to beta-conglycinin (7S), indicating stronger binding ability through hydrogen bonds. The successful preparation of the SPI-DG-MC complex will advance the application of soybean resource as a functional food ingredient.

Ultrasound irradiation alters the spatial structure and improves the antioxidant activity of the yellow tea polysaccharide

Partial degradation of yellow tea polysaccharides occurred during ultrasound treatment, but the monosaccharide composition remained unchanged. SeYPS-2 showed more potential in exerting these bioactivities than SeYPS-1.

Optimization of ultrasonic-assisted extraction of polysaccharides from Hemerocallis citrina and the antioxidant activity study

Summary: This study discussed the optimization of ultrasonic-assisted extraction of polysaccharides from daylily and its antioxidant activities. The optimal extraction yield of DPs was 15.25 +/- 1.13%, and four water-soluble polysaccharide fractions were successfully obtained, all showing significant antioxidant activities in vitro. Daylily polysaccharides could serve as inexpensive raw materials for developing natural antioxidants in medicines, functional foods, and cosmetics.
