Effect of Polydextrose on the Growth of Pediococcus pentosaceus as Well as Lactic Acid and Bacteriocin-like Inhibitory Substances (BLIS) Production

Bacteriocin-like inhibitory substances production by Enterococcus faecium 135 in co-culture with Ligilactobacillus salivarius and Limosilactobacillus reuteri

Summary: The present study investigated the production of bacteriocin-like inhibitory substances (BLIS) by a newly isolated strain of Enterococcus faecium 135, and its co-cultivation with Ligilactobacillus salivarius and Limosilactobacillus reuteri. The produced BLIS showed antimicrobial activity, especially against Listeria monocytogenes. The results suggest that the BLIS produced by E. faecium 135 has the potential to be used as an antimicrobial agent in animal breeding.

The impact of incorporating Lactobacillus acidophilus bacteriocin with inulin and FOS on yogurt quality

Summary: The current study aimed to investigate the effect of adding 2% inulin, 2% fructo-oligosaccharides (FOS), and Lactobacillus acidophilus bacteriocin on yogurt properties and consumer acceptance. The results showed that the addition of inulin, FOS, and Lactobacillus acidophilus bacteriocin increased the coagulation time and extended the shelf life of yogurt, while improving its microbiological quality. Consumer sensory evaluation also favored the yogurt samples with inulin, FOS, and Lactobacillus acidophilus bacteriocin.
