Recent studies have shown promising bioactive properties of vanillin, such as neuroprotection, anticarcinogenic, and antioxidant activities, as well as the ability to regulate gene expression and exhibit biological activities. Therefore, vanillin and its derivatives have the potential to be developed into new therapeutic molecules.
