Cobrancosa Table Olives: Characterization of Processing Method and Lactic Acid Bacteria Profile throughout Spontaneous Fermentation

Microbiological and physicochemical characterisation of green table olives of Halkidiki and Conservolea varieties processed by the Spanish method on industrial scale

Summary: The microbiological and physicochemical changes of industrially fermented Halkidiki and Conservolea green table olives were monitored, revealing dominance of lactic acid bacteria (LAB) over yeasts and absence of Enterobacteriaceae after 30 days. Lactiplantibacillus plantarum dominated in the beginning of fermentation, while Lactiplantibacillus pentosus and Pediococcus ethanolidurans prevailed at the end of fermentation in the two varieties. Kluyveromyces lactis/marxianus and Pichia manshurica prevailed at the onset of fermentation, with Pichia membranifaciens dominating in both varieties at the end.
