Micro-oxygenation level as a key to explain the variation in the colour and chemical composition of wine spirits aged with chestnut wood staves

Sara Canas et al.

Summary: Stronger oxygenation accelerates color evolution and increases total phenolic index of wine spirits, with no significant differences between different oxygenation levels after 365 days of aging. Oxygen plays a pivotal role in wine spirit aging, particularly in color evolution.

Identification of gallotannins and ellagitannins in aged wine spirits: A new perspective using alternative ageing technology and high-resolution mass spectrometry

Tiago A. Fernandes et al.

Summary: This research focused on identifying the degradation pathways of gallotannins and ellagitannins in wine spirits during the ageing process, and revealed the importance of oxygen in their formation and degradation. It also explained the steady increase of gallic and ellagic acid contents during ageing. Furthermore, various tannin compounds were found in the wine spirits aged with chestnut wood.

A narrative review: The pharmaceutical evolution of phenolic syringaldehyde

Jingyi Wu et al.

Summary: This review article compiles published literature on the pharmacological properties of syringaldehyde (SA), a key compound in whisky and brandy. Using molecular docking and in vitro and in vivo assays, the study validates the medicinal properties of SA, including anti-oxidation, anti-inflammation, and anti-diabetes effects. The results show that SA has significant binding affinity with various proteins involved in inflammation and diabetes. The study suggests that in silico screening combined with preclinical tests could lead to new indications for drug discovery and development.

Colour evolution kinetics study of spirits in their ageing process in wood casks

Manuel J. Delgado-Gonzalez et al.

Summary: This study conducted sixteen ageing experiments to investigate the color evolution of alcoholic beverages aged in wood casks, revealing a second-order kinetic process for color development during aging. The results also indicated that toasting pre-treatments of wood affect the kinetics of color development.

Wine Spirit Ageing with Chestnut Staves under Different Micro-Oxygenation Strategies: Effects on the Volatile Compounds and Sensory Profile

Ilda Caldeira et al.

Summary: This study evaluated the impact of alternative aging processes on wine spirits and compared it with traditional barrel aging. Oxygen was found to play a significant role in the volatile profile of aged wine spirits. Samples from alternative aging modalities were distinguished from wooden barrels based on volatile compounds, particularly volatile phenols. Promising sensory results were obtained from samples of the alternative aging process.
