Phenolic compounds profile and antioxidant capacity of 'Ataulfo' mango pulp processed by ohmic heating at moderate electric field strength

O. Y. Barron-Garcia et al.

Summary: This study evaluated the effects of ohmic heating and conventional heating on the phenolic compounds and antioxidant capacity of 'Ataulfo' mango pulp. The results showed that both ohmic heating and conventional heating had no significant impact on the phenolic compounds and antioxidant capacity of the pulp. Principal component analysis confirmed that mangiferin and gallic acid were the main contributors to the ABTS antioxidant capacity. Therefore, ohmic heating treatments can preserve the phenolic compound composition of mango pulp, thus maintaining its potential health benefits.
