Developed and characterization of nanostructured lipid carriers containing food-grade interesterified lipid phase for food application

Summary: The main objectives of this study were to produce new nanostructured lipid carriers (NLCs) and investigate the influence of lipid composition on the physical characteristics and stability of NLCs. The results showed that NLCs were influenced by chemical interesterification and the composition of the solid lipid used, particularly in relation to the fatty acid chain size. NLCs developed with a simple lipid phase exhibited larger particle sizes when saturated fatty acids with larger chain sizes were used. Interesterification reduced the melting temperature of NLCs and favored the formation of crystals in the beta' form, which is beneficial for incorporating bioactive compounds. The composition of the NLCs developed in this study is innovative and holds great potential for food applications.

The results showed that nanocapsules had higher efficiency and antioxidant activity, with lower density and moisture content. The addition of different forms of burdock root extract significantly improved the quality of the samples without adverse effects on flavor and odor.

The dual effect of shellac on survival of spray-dried Lactobacillus rhamnosus GG microcapsules

Combination of hydrophobic polyester shellac with whey protein isolate (WPI) can solve this problem. The best protection during storage is provided by the 1:1 shellac-WPI ratio, as shellac has a moisture barrier effect under moderate humidity.

Preparation and antimicrobial activity of pectin-chitosan embedding nisin microcapsules

Optimization of Electrospray-Assisted Microencapsulation of Probiotics (Leuconostoc lactis) in Soy Protein Isolate-Oil Particles Using Box-Behnken Experimental Design

Summary: This study evaluated and optimized the electrospraying process for microencapsulating probiotics in a soy protein isolate and sunflower oil matrix. By controlling the concentrations of SPI and SO, as well as the voltage range, it was found that the combination of specific concentrations of SPI and SO during electrospraying can effectively protect probiotic cells and improve encapsulation efficiency. Overall, the study showed that combining SPI and SO at specific concentrations during electrospraying can provide a protective effect on probiotic cells.

The microcapsules composed of all MRPs had the best storage stability and maintained high levels of viable bacteria during in vitro digestion.
