Predictors of vegetable consumption in children and adolescents: analyses of the UK National Diet and Nutrition Survey (2008-2017)

Liam R. Chawner et al.

Summary: Factors such as age, ethnicity, income level, variety of vegetables eaten, and daily energy intake can predict children's vegetable consumption. Vegetables are consumed in larger portion sizes at home, with family members, and at evening mealtimes. Certain food groups like carbohydrates and protein increase the likelihood of vegetables being present, while foods high in fats, sugars, and salt decrease the likelihood of vegetable presence.

Preschoolers will drink their GREENS! Children accept, like, and drink novel smoothies containing dark green vegetables (DGVs)

Brandi Y. Rollins et al.

Summary: The study found that preschool children were willing to try fruit smoothies supplemented with DGVs, rated the green smoothies as moderately-liked, and the intake met 31% of the weekly USDA recommendations for DGVs.
