Summary: The antioxidant peptides from grass carp scale gelatin have a protective effect on H2O2-mediated oxidative injured HepG2 cells, which could be attributed to the increase in SOD, CAT, and GPX activities, decrease in ROS level and MDA content, as well as reduced damage on cell membrane and DNA. The peptide sequences of grass carp scale gelatin hydrolysates were mainly low molecular weight peptides, and the synergistic effect among them contributed to the strong antioxidant activities.

They can bind to proteins through covalent and non-covalent bonds, exhibiting specific bioactivities. Additionally, they can enhance the rheological and mechanical properties of food-grade delivery systems, showing the versatility of seaweed phenolics.
