Thermodynamic analysis and modeling of water vapor adsorption isotherms of roasted specialty coffee (Coffee arabica L. cv. Colombia)

Gentil A. Collazos-Escobar et al.

Summary: This study addresses the experimental assessment and computer modeling of water vapor adsorption isotherms for roasted specialty coffee. The results suggest that specialty coffee should preferably be stored as beans due to the high moisture adsorption found in ground coffee. The differential thermodynamic analysis revealed the spontaneity of the adsorption process and an increase in water adsorption energy.

Moisture sorption isotherm and thermodynamic analysis of quinoa grains

Sultan Arslan-Tontul

Summary: This study explores the sorption properties of quinoa grains using a thermodynamic approach, finding that both isosteric heat of sorption and sorption entropy decrease with increasing moisture content and water activity. The adsorption isotherm of grains exhibits a sigmoidal shape, indicating a complex sorption process.

Comparison on sensory profile, volatile composition and consumer's acceptance for PDO or non-PDO tigernut (Cyperus esculentus L.) milk

Jesus Clemente-Villalba et al.

Summary: The study found that there was no significant difference in volatile compounds between protected and non-protected tigernut milks, but there were differences in consumer preference. Additionally, few people were familiar with the PDO Chufa de Valencia, highlighting the need for increased awareness and promotion.

Sorption isotherms and thermodynamic properties of wheat malt under storage conditions

Kamilla Soares Silva et al.

Summary: The study investigated sorption isotherms of wheat malt under different temperatures and relative humidity conditions, with thermodynamic properties evaluated. Equilibrium moisture content of wheat malt was found to increase with water activity and decrease in temperature, with Henderson and GAB models showing the best fit. The study provides useful data for designing adequate storage conditions for wheat malt.

Moisture sorption and thermodynamic properties of Camellia oleifera seeds as influenced by oil content

Guangfei Zhu et al.

Summary: The research investigated the moisture sorption isotherms and thermodynamic properties of Camellia oleifera seeds influenced by oil content. Different temperatures and water activities were used to determine the moisture desorption and adsorption isotherms for seeds, kernels, and shells of three varieties. The study found that equilibrium moisture contents tended to decrease with increasing oil content and temperature, and hysteresis of adsorption processes occurred during desorption and adsorption.
