Improving tyrosinase inhibitory activity of grass carp fish scale gelatin hydrolysate by gastrointestinal digestion: Purification, identification and action mechanism

Zi-Zi Hu et al.

Summary: Biologically active peptides with tyrosinase inhibitory activity from grass carp fish scale gelatin hydrolysates have been obtained and tested for their efficacy in whitening foods. The digested products showed stronger tyrosinase inhibitory activity compared to the original hydrolysates. Six peptides with tyrosinase inhibitory activity were identified using bioaffinity ultrafiltration, with FTGML showing the highest inhibitory activity. The interaction between FTGML and tyrosinase was mainly driven by hydrogen bonding and hydrophobic interaction. In vivo studies using zebrafish models confirmed the whitening and lightning effects of FTGML at specific concentrations.

Chitosan/Sodium Alginate/Velvet Antler Blood Peptides Hydrogel Promoted Wound Healing by Regulating PI3K/AKT/mTOR and SIRT1/NF-κB Pathways

Mingqian Hao et al.

Summary: This study reported a multi-functional hydrogel, CAVBPH, which not only improved cell proliferation, angiogenesis, and extracellular matrix secretion, but also reduced inflammation at the wound site. The possible mechanism might be related to the activation of the PI3K/AKT/mTOR and SIRT1/NF-kappa B pathways.

Monitoring the Effects of Hemicellulase on the Different Proofing Stages of Wheat Aleurone-Rich Bread Dough and Bread Quality

Boyu Tian et al.

Summary: The study found that hemicellulase dosage significantly affected bread quality and gluten network. The optimal hemicellulase dosage improved bread specific volume and reduced breadcrumb firmness. Hemicellulase enhanced gluten viscoelasticity by catalyzing the transition from alpha-helix to beta-sheet, contributing to the improvement of wheat aleurone-rich bread quality.

Food-Derived Bioactive Peptides with Antioxidative Capacity, Xanthine Oxidase and Tyrosinase Inhibitory Activity

Anthony Thaha et al.

Summary: The study examined 11 bioactive peptides derived from fish and egg white as potential natural antioxidants by conducting antioxidant activity assays. Among them, VWWW (VW4, mackerel meat), IRW (IW3, egg white), and VKAGFAWTANQQLS (VS14, tuna backbone protein) showed the highest antioxidant activity, indicating their potential as antioxidants and natural xanthine oxidase (XOD) inhibitors. Additionally, these peptides displayed competitive inhibition against both XOD and tyrosinase, suggesting their potential applications in preventing milk-fat oxidation and inhibiting food-derived tyrosinase oxidation.
