Structure, functional properties and iron bioavailability of Pneumatophorus japonicus myoglobin and its glycosylation products

Beibei Tan et al.

Summary: The study investigated the structure, physicochemical properties, and iron bioavailability of myoglobin (Mb) extracted from P. japonicus, as well as the effects of glycosylation on these parameters. Glycosylation of Mb resulted in a more ordered structure, decreased surface hydrophobicity, increased water solubility, enhanced antioxidant capacity, and improved stability in enzymatic digestion. The bioavailability of Mb-iron was significantly higher than FeSO4, and further elevated by glycosylation, providing a basis for developing Mb-based iron supplements and promoting the utilization of fish-processing industries wastes.

Effect of ascorbic acid and citric acid on bioavailability of iron from Tegillarca granosa via an in vitro digestion/Caco-2 cell culture system

Bolun Sun et al.

Summary: The study investigated the mineral contents in T. granosa, extracted iron-binding proteins and evaluated their bioavailability, as well as assessed the impact of two dietary factors. Results showed T. granosa has high mineral content, and heme iron has higher bioavailability compared to non-heme iron.

Determination of the iron bioavailability, conformation, and rheology of iron-binding proteins from Tegillarca granosa

Gaoshang Li et al.

Summary: The study focused on the iron bioavailability and structural properties of iron-binding proteins from Tegillarca granosa (T. granosa). Results indicated that hemoglobin in T. granosa had better iron bioavailability, suggesting it could be a valuable source of iron. These findings offer insights into the potential use of T. granosa in functional food production.
