Fabrication and characterization of bioactive nanoemulsion-based delivery systems

Summary: A nanoemulsion-based delivery system was developed by encapsulating different concentrations of oregano essential oil. The characterized OEO-loaded nanoemulsion systems showed good size distribution and antifungal properties. Encapsulated OEO in NESs exhibited stronger antifungal efficiency compared to free OEO.

Development of cake mix with reduced fat and high practicality by adding chia mucilage

Summary: This study aimed to develop a ready-made cake mix using dry chia mucilage as a fat substitute and requiring only the addition of water in its preparation. The ready-made mix showed a significant reduction in lipid content and higher protein and carbohydrate content compared to a commercial cake mix. Despite being firmer, the new cake mix was still accepted due to its better nutritional properties and easy preparation.

Summary: By adding nanoemulsions, the fat content in cookies can be reduced without compromising the desired properties. The cookies with nano-oil added had a higher spread ratio and lower hardness compared to the control group. The fatty acid composition in cookies changed with the addition of nano-oil, leading to improved sensory properties.
