Compositional, structural design and nutritional aspects of texture-modified foods for the elderly

Marta Gallego et al.

Summary: This review focuses on the production methods and nutritional characteristics of texture-modified foods (TMF), as well as the influence of food matrix structure and material properties on nutrient digestion. Designing products with suitable texture, nutrition, and sensory characteristics for the elderly requires considering multiple factors.

Diluted Acetic Acid Softened Intermuscular Bones from Silver Carp (Hypophthalmichthys molitrix) by Dissolving Hydroxyapatite and Collagen

Yueyue Liu et al.

Summary: This study found that diluted acetic acid can effectively soften intermuscular bones (IBs) in silver carp without significantly affecting the texture and flavor of the fillets. The acetic acid breaks the connections between collagen molecules and between collagen and hydroxyapatite (HAP), leading to the dissolution of collagen and HAP, with the dissolution of HAP contributing more to the softening of IBs.

Meat analog production through artificial muscle fiber insertion using coaxial nozzle-assisted three-dimensional food printing

Hyun Jung Ko et al.

Summary: This study presents a method for simulating meat texture using a coaxial nozzle-assisted 3D food printer with cross-linkable hydrocolloids. By utilizing different formulations of hydrocolloids, gel strengths and textures comparable to actual meat were achieved. Post-processing results showed reduced cooking loss and significant correlation between final gel strength and texture properties.

Preparation and characterization of surimi-based imitation crab meat using coaxial extrusion three-dimensional food printing

Sun Min Kim et al.

Summary: This study introduces a novel approach of using coaxial extrusion 3D food printing to implement the filament structure of imitation crab meat by coating potato starch solution on the surimi. Experiments conducted to determine the optimal concentration revealed that a 12% PS solution yielded the best results in terms of printing characteristics, water-holding capacity, and cooking loss. Additionally, this study showcases the use of rectilinear and concentric patterns to alter the internal texture of the 3D-printed imitation crab meat.

Effects of mealworm larva composition and selected process parameters on the physicochemical properties of extruded meat analog

Sun Young Cho et al.

Summary: The study aimed to investigate the effects of different mealworm larva contents and extrusion process parameters using twin-screw extruder on the physicochemical properties of the extruded meat analog. The study found that as the mealworm larva content increased, the integrity index, texture profile analysis, and oxidation activity of the extruded meat analog decreased, but water holding capacity, nitrogen solubility index, protein digestibility, and DPPH radical scavenging activity increased significantly. Lower die temperature and higher moisture content enhanced textural properties, while higher die temperature led to increased DPPH activity but decreased TBARS.
