Quality Characteristics and Consumer Acceptance of High-Moisture Mozzarella Obtained from Heat-Treated Goat Milk

Summary: Two new protocols for producing mozzarella from pasteurized milk were tested in this research, revealing that heat treatments resulted in longer coagulation times which were counteracted by pre-acidification. The chemical composition, texture, proteolysis, and lipolysis of the obtained cheeses were varied due to both pasteurization and pre-acidification. Consumer testing indicated that mozzarella made from milk heated at a lower temperature and coagulated at a higher pH reached a satisfactory level of appreciation (62%).

Biological activities of the bioaccessible compounds after in vitro digestion of low-fat Akawi cheese made from blends of bovine and camel milk

Summary: This study evaluated protein degradation and biological activities of water-soluble extract (WSE) and in vitro digesta of low-fat Akawi cheese made from blends of bovine milk and camel milk. The results showed that WSE from these blends exhibited higher antioxidant and biological activities than cheese made from bovine milk only, suggesting that blends of camel milk and bovine milk can modulate the biological activities of low-fat Akawi cheese.
