Transforming wasted food will require systemic and sustainable infrastructure innovations

Callie W. Babbitt et al.

Summary: Currently, 40% of food produced in the U.S. is wasted, causing resource loss, economic costs, decreased food security, and significant climate and ecological impacts. However, there are ways to leverage this unwanted food towards sustainable development, such as diverting surplus to food-insecure communities, recycling carbon and nutrients into agriculture, and converting food waste into bioenergy. This transformation requires the co-evolution of physical infrastructure systems and human infrastructure.

Techno-economic optimization of food waste diversion to treatment facilities to determine cost effectiveness of policy incentives

Kanwal Shahid et al.

Summary: New York state has passed a food waste disposal ban that will redirect 370,000 tons of food waste from landfills by 2022. Research suggests that a mix of composting and FW-only digestion is the cheapest response to the landfill ban, and policy support can significantly increase electricity production from digestion.

Building competitive advantage with sustainable products e A case study perspective of stakeholders

Inamutila Kahupi et al.

Summary: The study found that investors are skeptical about sustainable innovations, while customers are more accepting and willing to get involved; Sustainable entrepreneurs are advised to ensure that the underlying business case of their firm is as well developed as the product itself; The main barrier hindering the success of some sustainable innovations is not their cost, but the tendency of human nature to delay change until problems become critical; Currently, investing in sustainable innovations is more attractive in regions with positive sustainability regulations such as California and some European countries.

Behavioral impacts on residential food provisioning, use, and waste during the COVID-19 pandemic

Callie W. Babbitt et al.

Summary: The COVID-19 pandemic disrupted food systems, causing food shortages and waste, leading to changes in consumer behavior around purchasing, using, and wasting food. Household food waste reduction was linked to behaviors like meal planning and utilizing leftovers, while stockpiling and bulk purchasing correlated with increased food waste. Over 60% of respondents planning to continue efficient food use behaviors post-pandemic, indicating potential for sustained change in consumption practices.
