New insight into the mechanism by which antifreeze peptides regulate the physiological function of Streptococcus thermophilus subjected to freezing stress

Xu Chen et al.

Summary: This study investigates how antifreeze peptides regulate the physiological functions of frozen cells during the freezing process. The results show that rsfAFP interacts with the extracellular capsular polysaccharides and peptidoglycan of Streptococcus thermophilus and ice to form a protective layer, which reduces membrane damage, depresses apoptosis, and increases intracellular metabolic activity.

Investigation of the cryoprotective mechanism and effect on quality characteristics of surimi during freezing storage by antifreeze peptides

Xu Chen et al.

Summary: Antifreeze peptides (AFPs) exhibit a strong protective effect on the quality of surimi during freezing storage by inhibiting ice crystal recrystallization, reducing protein oxidation, and maintaining water mobility. This suggests that AFPs could be used as a functional food ingredient for the storage of surimi products.

Importance of rigidity of ice-binding protein (FfIBP) for hyperthermal hysteresis activity and microbial survival

Jisub Hwang et al.

Summary: This study investigates the role of the head capping region in the stabilization and hyper-TH activity of FfIBP using molecular dynamics simulation. The findings show that residues on the ice-binding site are immobilized and the disulfide bond in the head region is crucial for protein stabilization and hyper-TH activity.
