In-silico investigation of umami peptides with receptor T1R1/T1R3 for the discovering potential targets: A combined modeling approach

Wenli Wang et al.

Summary: This study analyzed the sequence and properties of umami peptides, and investigated their active sites and binding residues with the receptor T1R1/T1R3. The results identified the key active sites as well as the crucial residues in the receptor that bind umami peptides. A decision rule was proposed to predict potential umami peptides, providing convenience and efficiency.

Characterization and molecular docking study of taste peptides from chicken soup by sensory analysis combined with nano-LC-Q-TOF-MS/MS

Li Liang et al.

Summary: Dynamic quantitative descriptive analysis and temporal dominance of sensations were used to analyze the taste profiles of chicken soup. Nine taste peptides were identified and evaluated, with umami and saltiness being the dominant tastes. Molecular docking results indicated the key binding sites for taste receptors and their correlation with umami intensity.

The enhancement of the perception of saltiness by umami sensation elicited by flavor enhancers in salt solutions

Xiaoxia Sun et al.

Summary: This study investigated the effects of umami carriers on saltiness enhancement and sodium reduction, and found that umami carriers had better effects at higher salt concentrations. The level of saltiness enhancement varied between different umami intensities and carriers, with moderate intensity WSA carrier achieving the highest sodium reduction percentage. Additionally, umami carriers increased the saltiness difference thresholds, indicating that more salt can be reduced without altering the perception of saltiness.

Identification of novel saltiness-enhancing peptides from yeast extract and their mechanism of action for transmembrane channel-like 4 (TMC4) protein through experimental and integrated computational modeling

Dong-Yu Shen et al.

Summary: Excessive consumption of sodium salt is an important factor in cardiovascular and cerebrovascular diseases, making research on low-sodium salt crucial. This study used various methods to purify and identify salty enhancing peptides in yeast extracts and discovered the taste-enhancing properties of PN, NSE, NE, and SPE through sensory evaluation. The taste mechanisms of these peptides were also investigated.

Fractionation and identification of salty peptides from yeast extract

Yingying Zheng et al.

Summary: Research should focus on developing novel agents to replace salt in foods without affecting taste, to avoid health risks associated with high-salt diets. Some yeast extracts can be used as salt substitutes without imparting additional odors. Salty peptides were fractionated from Angel Yeast in this study.

Enhancement of saltiness perception by odorants selected from Chinese soy sauce: A gas chromatography/olfactometry-associated taste study

Ting Zhou et al.

Summary: The odor-taste interaction is an effective method for salt reduction, where odorants associated with saltiness in soy sauce were identified and found to enhance saltiness and umami taste. These odorants, when added to food, significantly enhanced the perception of saltiness, indicating their potential use in compensating for reduced sodium chloride content in food.

Characterization of the key taste compounds during bread oral processing by instrumental analysis and dynamic sensory evaluation

Dandan Pu et al.

Summary: The study found that during chewing bread, salty, sour, and sweet tastes undergo significant changes, with salty taste being dominant initially and sweet taste taking over after 7 seconds. Key taste compounds contributing to bread oral processing, such as malic acid and succinic acid, were identified through addition experiments.

Isolation, characterization and molecular docking of novel umami and umami-enhancing peptides from Ruditapes philippinarum

Yue Zhang et al.

Summary: Fourteen novel umami peptides were isolated and identified from Ruditapes philippinarum, with KSAEN and QIEELEGK having higher sensory evaluations, and PAATIPE and HNESQN showing the best umami-enhancing taste in a 0.35% MSG solution. Molecular docking showed that certain amino acids may play important roles in the interaction of peptides with taste receptors, contributing to the umami taste of the shellfish.
