Characterization and in vitro antimicrobial study of soy protein isolate films incorporating carvacrol

Ran Tao et al.

Summary: The study evaluated the effects of incorporating carvacrol in soy protein isolate (SPI) films, showing that carvacrol can reduce resistance and rigidity of SPI films and increase their extensibility. Changes in protein secondary structure and release kinetics were observed, with glycerol promoting carvacrol release from the films. Films containing >= 2% carvacrol exhibited high antimicrobial activities against Listeria grayi in vapor phase, suggesting potential use in active packaging for food safety improvements.

Effect of Plasticizers on the Properties of Potato Flour Films

Shao-xiang Guo et al.

Summary: Different plasticizers were found to significantly affect the mechanical properties, transparency, and water resistance performance of potato flour films. Ethylene glycol plasticized films showed the highest tensile strength and lowest elongation at break, while xylitol, sorbitol, ethylene glycol, and glycerol plasticized films were the most transparent. Films with PEG200 and urea had higher moisture content and water vapor permeability, while PEG400 and propylene glycol plasticized films showed differences in water solubility and water contact angle. Plasticizer type played a crucial role in improving the properties of potato flour films.

Hydroxypropyl methylcellulose hydrocolloid systems: Effect of hydroxypropy group content on the phase structure, rheological properties and film characteristics

Yanfei Wang et al.

Summary: This study investigates the impact of hydroxypropyl substitution degree and blending with hydroxypropyl starch on the structure and film performance of hydroxypropyl methylcellulose (HPMC) hydrocolloids. It is found that hydroxypropylation enhances gelation and film-forming of HPMC, but reduces the mechanical properties of the films. The compatibility between HPMC and HPS, as well as the hydroxypropy groups content, affect the morphology and rheological properties of the blends. With higher levels of hydroxypropy substitution, blend films exhibit denser structure, better oxygen barrier property, and appropriate mechanical properties.

Effects of soy protein isolate on mechanical and hydrophobic properties of oxidized corn starch film

Chenglong Liu et al.

Summary: The study focused on improving the mechanical properties and moisture barrier of oxidized corn starch (OS) film by incorporating soy protein isolate (SPI) at different ratios and pH values. The increase in SPI ratio and pH led to reduced moisture content and improved moisture barrier, as shown by lower water vapor permeability and higher contact angle. The blended films exhibited denser microstructures and smoother surfaces at higher pH values, suggesting interference with the intermolecular interaction of OS by SPI.
