Lentil allergens identification and quantification: An update from omics perspective

Summary: Lentil is a major dietary component in many Mediterranean and Asian countries due to its high nutritional value, but it can also trigger allergic reactions. Profiling and quantification of lentil allergens are crucial for better management of lentil food allergies. Recent studies using mass-spectrometry-based proteomic platforms have successfully identified known and potential allergenic proteins in lentils. Future strategies for profiling and developing precise assays for lentil allergens could aid in the identification of low allergen-containing lentil cultivars.

Summary: Potential proteins from three novel food sources were predicted and evaluated for allergic cross-reactivity risks by comparing amino acid sequences against allergens in the AOL database. Despite many proteins exceeding CODEX limits for identity matches, these matches were not predictive of allergy risks based on observed taxonomic cross-reactivity. New methods or changes in allergen databases are recommended for better risk evaluation.

Statement on in vitro protein digestibility tests in allergenicity and protein safety assessment of genetically modified plants

Summary: This statement supplements and updates the 2017 GMO Panel guidance document on allergenicity of genetically modified plants, pointing out the limitations of current in vitro digestion tests and the need for more reliable systems to predict the fate of proteins in the gastrointestinal tract. The classical pepsin resistance test is no longer considered a good predictor of allergenic potential, and further research is needed to develop more robust strategies for safety assessment of proteins.
