Cell-Inspired Hydrogel Microcapsules with a Thin Oil Layer for Enhanced Retention of Highly Reactive Antioxidants

Summary: This study reports the development of cell-inspired hydrogel microcapsules that effectively encapsulate and retain antioxidants. The microcapsules have an interstitial oil layer and an ionic gelation hydrogel shell, providing enhanced retention and protection of the antioxidants. Addition of a lipophilic reducing agent in the oil layer enhances the antioxidant activity, and lowering the storage temperature further improves the antioxidant activity.

Develop and characterize thermally reversible transparent gels from pea protein isolate and study the gel formation mechanisms

Summary: This study reported a transparent and thermo-reversible gel prepared with pea protein isolate extracted using ammonium sulfate precipitation method. The protein concentration and pH were found to be critical factors for gel formation, and within a certain range, thermo-reversible gels with good mechanical properties could be obtained. The gel's thermo-reversibility was stable upon repeated heating and cooling processes. Scanning electron microscopy showed that gels formed at lower pH had a transparent fine-stranded network structure, while increasing pH resulted in an opaque gel with particulate aggregates, while still maintaining thermo-reversibility. Hydrogen bonds were found to play a dominant role in gel network formation, while hydrophobic interactions and disulfide bonds were not significantly involved.
