Microencapsulation of probiotic lactobacilli with shellac as moisture barrier and to allow controlled release

Xue Huang et al.

Summary: Microcapsules with LAC addition were designed in this study to provide better moisture barrier and controlled release in the digestive tract. Results showed that microcapsules with LAC addition had larger particle size, denser structure, lower hygroscopicity, and slower solubilization in water. Probiotic survivals followed the order of ALG/WPI/LAC >= ALG/WPI >= ALG/LAC > ALG in digestive juices.

Efficient cesium encapsulation from contaminated water by cellulosic biomass based activated wood charcoal

Shahjalal Khandaker et al.

Summary: A cost-effective cellulosic biomass based activated wood charcoal was developed for Cs adsorption from contaminated water. The adsorption process followed Langmuir isotherm and pseudosecond-order kinetic models, with a maximum adsorption capacity of 35.46 mgg(-1). Burning the Cs adsorbed charcoal resulted in a 98% volume reduction, ensuring safe storage and disposal of radioactive waste.

Fabrication of fish gelatin / sodium alginate double network gels for encapsulation of probiotics

Jialin Liu et al.

Summary: The study demonstrated that the addition of fish gelatin improved the transparency, rehydration, and water-holding capacity of the double network gelation. Scanning electron microscope images showed that the encapsulation system had a denser and more complete structure than sodium alginate alone. Encapsulation efficiency increased significantly with increasing fish gelatin concentration, and the encapsulated probiotics exhibited higher viability in simulated gastric fluid compared to free probiotics.

Kappa-carrageenan enhances the gelation and structural changes of egg yolk via electrostatic interactions with yolk protein

Min Huang et al.

Summary: The study found that the addition of x-carrageenan had an impact on the gelation properties of egg yolk, mainly through electrostatic interactions. The addition of x-C increased the average area of holes formed by yolk gelation and decreased the gelling points. FTIR spectroscopy confirmed the interactions between x-C and proteins.

Explore the interaction mechanism between zein and EGCG using multi-spectroscopy and molecular dynamics simulation methods

Chengzhi Liu et al.

Summary: The study investigated the binding mechanism of zein with EGCG, revealing that static quenching is the main interaction mode. Molecular dynamics simulation showed that EGCG prefers to bind to a pocket of zein formed by specific residues, with electrostatic and van der Waals interactions playing a dominant role in the binding. This research provides new insights into the interaction mechanism between zein and EGCG, which is crucial for developing plant protein as a tea polyphenol delivery system.

Interpenetrating polymer network hydrogels of soy protein isolate and sugar beet pectin as a potential carrier for probiotics

Wenjia Yan et al.

Summary: The combination of SPI and SBP can be used to prepare an IPN hydrogel with tunable properties. The addition of probiotics resulted in changes in gel properties, decreasing storage modulus and hardness. Probiotics exposed tryptophan-containing extension regions within SPI molecules and hindered the formation of covalent cross-links or physical interactions during gelation.
