Effect of chitosan oligosaccharide glycosylation on the emulsifying property of lactoferrin

Summary: This study investigated the effect of glycation with chitosan oligosaccharide (COS) on the emulsifying properties of lactoferrin (LF). The results showed that glycation with COS led to smaller droplet size and increased stability of LF-stabilized emulsions. Additionally, glycation enhanced the interfacial activity of LF.

Ultrasound assisted vis-a-vis classical heating for the conjugation of whey protein isolate-gellan gum: Process optimization, structural characterization and physico-functional evaluation

Summary: This study compared ultrasonication with classical heating methods for the synthesis and characterization of Maillard conjugates of whey protein isolate (WPI) and gellan gum (GG). Ultrasonication accelerated the initial stage of the Maillard reaction, leading to higher degree of glycation in a shorter time. Physicofunctional properties of WPI-GG conjugates prepared by ultrasonication were superior to the classical heating method.
