Mechanism of interactions between egg protein-derived tri-peptides and cellular membrane by molecular dynamic simulation and isothermal titration calorimetry

Summary: This study investigated the interaction of egg-derived ACE inhibitory tri-peptides with the membrane using molecular dynamic simulation and isothermal titration calorimetry. The results showed stable structures of peptides, with specific amino acid residues playing a role in membrane absorption. The study also found that various interactions stabilized the interaction between peptides and the membrane.
