Development of oral curcumin based on pH-responsive transmembrane peptide-cyclodextrin derivative nanoparticles for hepatoma

Tiantian Wei et al.

Summary: In this study, a pH-responsive cyclodextrin derivative and curcumin-loaded nanoparticles were developed to enhance the efficacy of curcumin in hepatoma treatment. The nanoparticles showed improved cell uptake and pH-responsive uptake, leading to higher accumulation in hepatoma cells. The nanoparticles also exhibited the ability to escape from lysosomes and induce apoptosis. In vivo experiments demonstrated excellent anti-cancer effects when given orally. Overall, these findings highlight the potential of the developed nanoparticles as an effective delivery system for oral curcumin in cancer management.

Fabrication, characterization and in vitro digestive behavior of Pickering emulsion incorporated with dextrin

Yuying Hu et al.

Summary: This study investigated the effects of adding dextrin to whey protein-stabilized Pickering emulsion on its physicochemical properties and in vitro digestive behavior. The results showed that the emulsion was stable at low dextrin concentrations but exhibited droplet flocculation at higher concentrations. The addition of dextrin increased the viscosity of the emulsion and affected the digestive process and bioaccessibility of nutrients.

In vitro digestion of solid-in-oil-in-water emulsions for delivery of CaCO3

Jie Zhang et al.

Summary: The formation of CaCO3 loaded particles based on S/O/W emulsions is a promising method to improve the dispersion stability and digestive properties of CaCO3 in liquid foods. The interaction between NaCas and GEL helps stabilize the emulsion and enhance the embedding rate of CaCO3. The addition of GEL weakens the aggregation structure during gastric digestion and slows down the digestion process.

Impact of sodium alginate on binary whey/pea protein-stabilised emulsions

Woojeong Kim et al.

Summary: This study investigates the impact of sodium alginate addition on binary whey/pea protein-stabilised emulsions at different pH levels. The addition of sodium alginate reduces droplet sizes and enhances the stability of emulsions at pH 6.6. However, at pH 11.0, the addition of sodium alginate leads to phase separation in the binary whey/pea protein-stabilised emulsions. Furthermore, the presence of sodium alginate promotes protein adsorption at the interface, preventing the displacement of pea protein by whey protein during storage.
