Preliminary study on kinetics of pyroglutamic acid formation in fermented milk

Alessandra Aiello et al.

Summary: The formation and kinetics of pyroglutamic acid (pGlu) in fermented milk samples were studied, and it was found that the content of pGlu increased during fermentation and storage. The concentration of pGlu varied among different types of fermented milk products.

WHEY-The waste-stream that became more valuable than the food product

Paraskevi Tsermoula et al.

Summary: Extensive research has been conducted on the chemical composition and biological activities of whey, but the detailed profile of the low-molecular weight components, especially the non-protein nitrogen, remains not fully elucidated. The use of foodomics offers a promising approach to uncover the known-unknown part of whey streams, leading to the production of high-quality ingredients and a better understanding of whey composition.
