Encapsulation of Sardine Oil by Electrospraying with Gliadins and Pecan Nutshell Extracts for its Stabilization

Summary: This study optimized the diameter of encapsulated sardine oil particles and investigated the stabilization effect of pecan nutshell extract. The results suggest that gliadins and pecan nutshell extract could be effective new wall materials for encapsulation and stabilization of sardine oil. Additionally, pecan nutshell extract has the potential to be used as a nutraceutical ingredient or in the development of functional foods by the food industry.

Influence of konjac glucomannan on thermal and microscopic properties of frozen wheat gluten, glutenin and gliadin

Summary: Different concentrations of konjac glucomannan (KGM) had varying effects on the denaturation properties of frozen wheat gluten proteins, with a positive impact on gluten and gliadin, and a decrease in denaturation temperature and enthalpy of glutenin. The addition of KGM increased the alpha-helix structure of frozen gluten and gliadin, while decreasing that of frozen glutenin, indicating a potential interaction mechanism between KGM and the proteins. The scanning electron microscopy results confirmed the enhanced interaction between wheat proteins and KGM.

In-silico behavior of dissolved prolamins under electric field effect applied by electrospinning process using molecular dynamics simulation

Summary: The molecular dynamics simulations revealed that alpha-zeins and alpha-gliadin exhibited unstable structures and loss of native secondary structure domains when dissolved in 70% aqueous ethanol, showing characteristics of random coil. The selection of an electric field of 2 V/nm for jet formation under different electric fields was found to be the most effective for stabilizing jets. Electrospinning simulations of zeins and gliadin under the same electric field led to the generation of fibrous proteins with significant feature loss.
