Enrichment of antioxidants compounds in cookies produced with camu-camu (Myrciaria dubia) coproducts powders

Summary: This study evaluates the effects of different drying temperatures on camu-camu coproducts, as well as the substitution of wheat flour with this coproduct in cookies. The coproduct dried at 70 degrees C exhibited the highest concentration of total phenolic and antioxidant potential. Incorporating up to 20% of camu-camu coproduct powder did not affect the physical properties of the cookies but improved their total phenolic and antioxidant potential.

Valorization of agro-food by-products and their potential therapeutic applications

The Effects of Grape, pomegranate, Sesame Seed Powder and Their Oils on Probiotic Ice Cream: Total phenolic contents, antioxidant activity and probiotic viability

Summary: This study aimed to produce probiotic ice cream with added vegetable seed pulp powder and oils, and examined their effects on various parameters of the ice cream samples during storage. The findings suggest that the vegetable seed powders and oils did not affect the pH and acidity of the ice cream, while contributing to the preservation of probiotic viability. Among the seed powders, grape seed had the highest phenolic content and antioxidant activity, promoting the development of probiotic microorganisms in the ice cream samples. Additionally, the total phenolic content and antioxidant activity of the seed powders and oils were consistent with those of the ice creams produced using them.
