Effect of walnut flour addition on rheological, thermal and microstructural properties of a gluten free-batter

Portable single-sided NMR measurements at variable temperatures: Implementation of a thermo-controlled device and application to the heating of bread dough

An insight into tapioca and wheat starch gelatinization mechanisms using TD-NMR and complementary techniques

Summary: In this study, a detailed investigation of tapioca starch was conducted using multiscale analysis to provide evidence for previously proposed assumptions about starch gelatinization sub-mechanisms. Time-domain nuclear magnetic resonance (TD-NMR) was used to analyze the leaching of material, water absorption, and crystallite melting in hydrated tapioca starch. Results indicated that the proposed T2 assignments in the literature are dependent on starch origin, and the differences in T2 evolutions between wheat and tapioca starches at intermediate hydration levels can be attributed to the different gelatinization behavior of tapioca starch.

Understanding functionality of sucrose in cake for reformulation purposes

By qualitatively summarizing hypotheses on cake development using Complex Dispersed Systems methodology, as well as representing changes in cake states during manufacturing with a supplemented state diagram, important phase transitions during baking can be understood. Sugar replacers need to replicate the behavior of sucrose as both a plasticizer and humectant to achieve similar textures in reformulated cakes, with physical theories available for characterizing their plasticizing and hygroscopic behavior.
