Addition of 1, 4-α-glucan branching enzyme during the preparation of raw dough reduces the retrogradation and increases the slowly digestible fraction of starch in cooked noodles

Xiangqing Ji et al.

Summary: Using a cold-active 1,4-alpha-glucan branching enzyme (BlBE) to modify wheat dough significantly reduces the hardness and gumminess of noodles, while increasing their resilience and cohesiveness. It also decreases retrogradation and enhances the slowly digestible starch fraction in the noodles.

Distinct effects of different α-amylases on cross-linked tapioca starch and gel-improving mechanism

Man Yuan et al.

Summary: This study used two commercial alpha-amylases to improve the gel strength of cross-linked tapioca starch. The results showed that one alpha-amylase mainly attacked amorphous regions, while the other alpha-amylase hydrolyzed both amorphous regions and amorphous lamella of crystalline regions. The analysis of pasting and gelling properties indicated that the alpha-amylase increased the storage modulus of cross-linked starch gels, while the other alpha-amylase formed a solid gel.

An Innovative Short-Clustered Maltodextrin as Starch Substitute for Ameliorating Postprandial Glucose Homeostasis

Haocun Kong et al.

Summary: The study showed that using a 1,4-alpha-glucan branching enzyme (GBE) to reassemble starch molecules created a novel short-clustered maltodextrin (SCMD) with dense internal framework and shortened external chains, leading to reduced digestibility and improved postprandial glucose homeostasis. Intake of SCMD resulted in a 22.3% decrease in glycemic peak and a 40.5% lower insulin response in mice, suggesting its potential as a meaningful strategy for diabetes management.

Supermolecular structures of recrystallized starches with amylopectin side chains modified by amylosucrase to different chain lengths

Hao Zhang et al.

Summary: Understanding the supermolecular structures of recrystallized starches is crucial for producing starches with specific physicochemical properties. This study modified native amylopectin from maize to different chain lengths to create starches with varied crystallite structures. Acidic treatments eroded amorphous domains and produced nanocrystals, with their morphology and thermal stability showing a correlation.

Combined effects of pulsed electric field and ultrasound pretreatments on mass transfer and quality of mushrooms

Xiang Li et al.

Summary: The study showed that pulsed electric field, ultrasound, and combined pretreatments could accelerate mass transfer, improve rehydration capacity, cell structure, and retain nutritional quality of shiitake mushrooms during hot-air drying. The combined pretreatment group (PEF-US) exhibited the shortest drying time and highest levels of phenolics and soluble sugars.
