Starch fine structure and functional properties during seed development in BEIIb active and deficient rice

The role of different Wx and BEIIb allele combinations on fine structures and functional properties of indica rice starches

Summary: This study explored the effects of different combinations of Waxy and starch branching enzyme IIb alleles on starch fine structure and functional properties in indica rice cultivars. The findings revealed that be2b mutant starches with BEIIb deficiency exhibited higher amylose content, shorter amylose long chains, higher proportion of amylopectin long chains and molecular order, but lower proportion of amylopectin short chains and relative crystallinity, resulting in higher gelatinization temperature but lower enthalpy and paste viscosity. Compared to rice lines carrying Wxb allele, rice lines carrying Wxa allele showed relatively higher amylose content, longer amylopectin chains, less short-range ordered structure and lower relative crystallinity, leading to slightly lower gelatinization enthalpy.

Changes in fine structure of amylopectin and internal structures of starch granules in developing endosperms and culms caused by starch branching enzyme mutations of japonica rice

Summary: BEIIb plays a specific role in determining the structure of amylopectin in rice endosperm, while BEIIa plays a similar role in the culm where BEIIb is absent. The study found that the amylopectin structure in the be2a culm exhibited a B-type, similar to the wild-type culm. The starch granules in the be2a culm also showed a B-type allomorph. These results indicate that BEIIa can play a role similar to BEIIb in both the culm and the endosperm at early stages of development.

Characterization of the baking-induced changes in starch molecular and crystalline structures in sugar-snap cookies

Summary: This study utilized size-exclusion chromatography to analyze changes in starch molecular structure in sugar-snap cookies after baking, finding a significant decrease in the size of amylose chains but little difference in amylopectin chain-length distribution. The disruption of short-range ordered structure and periodic lamellar structure suggests important implications for cookie quality determinants.
