Effect of highly branched α-glucans synthesized by dual glycosyltransferases on the glucose release rate

Summary: Increasing alpha-1,6 linkages in starch molecules leads to the synthesis of highly branched alpha-glucans, which exhibit slowly digestible properties. These alpha-glucans contain a higher proportion of branched alpha-LDx compared to other starches. When hydrolyzed by mammalian alpha-glucosidases, the glucose generation rate decreases due to the increased amount of embedded branched alpha-LDx.

Effects of wet-media milling on multi-scale structures and in vitro digestion of tapioca starch and the structure-digestion relationship

Summary: This study aims to investigate the effects of wet-media milling on the multi-scale structural changes and in vitro digestion of tapioca starch. The results show that milling can break the surface structure of starch granules, increasing the digestion rate. It also disrupts the short-range ordered structure and transforms it into the amorphous phase, further enhancing the digestion rate. With longer milling time, the glycosidic bonds are broken, leading to the production of amylose and amylopectin fragments and continuous increase of the digestion rate. The disruption of the shell barrier on the starch surface is crucial for digestion.

Effects of extrusion and enzymatic debranching on the structural characteristics and digestibility of corn and potato starches

Summary: This study explores the effects of extrusion and enzymatic debranching on increasing the amylose content and subsequently the contents of slowly digestible starch and resistant starch. The results show that high substrate concentrations in the enzymatic debranching process can efficiently increase the amylose content, thereby significantly reducing the digestibility of starch. This has important implications for the production of slowly digestible starch and resistant starch.
