Phytochemical Compounds and Biological Properties of Carob Pods (Ceratonia siliqua L.) Extracts at Different Ripening Stages

Summary: The study evaluated the antioxidant, antibacterial, immunostimulant, and cytotoxic properties of carob pod extracts, finding that different ripening stages and extraction solvents could affect the composition and activity of the extracts. The extracts had no impact on gilthead seabream leucocytes, but exhibited cytotoxic effects on tumor cells and bactericidal activity against certain bacteria.
