Ethyl acetate fractions had high levels of phenols and flavonoids, showing significant antiradical, reducing power, and enzyme inhibitory ability. The water fraction, with the lowest polyphenol content, was more active in metal chelation.

Effects of a Myrciaria jaboticaba peel extract on starch and triglyceride absorption and the role of cyanidin-3-O-glucoside

Overall, the peel extract presents promising prospects as a fat absorption inhibitor, with cyanidin-3-O-glucoside playing a decisive role in this process.
