Summary: The study found that low-temperature frying is beneficial for improving the safety of FPS products, while the formation of trans-fatty acids is mainly related to high-temperature lipid oxidation. Total sugar, reducing sugars, and amino acids in pepper powder and other ingredients may lead to an increase in benzo[a]pyrene and acrylamide content, weakly correlated with lipid oxidation. Acrylamide is identified as the main hazardous compound in FPS during high-temperature frying.
